One of the things you can do with coconut flour is to make a nice smooth coconut flour pancakes with it. The recipe I have here will appeal to a broad range of people.

Depending on what you are doing currently, you can adjust the ingredients here to suit your purpose.

If you are a low carb person or on keto lifestyle, this recipe will fit in very well as you can make paleo, keto or low carb coconut flour pancake with it.

All you need to do is increase the amount of coconut oil I have suggested here, and you have yourself a high fat coconut flour pancake recipe.

If you eat normally, then this coconut flour pancake recipe will work just great. You don’t need to make any adjustments. Use it as it is.

With coconut flour, you avoid the regular wheat flour that is so refined, it most likely will spike your blood sugars regardless of whatever product you make with it.

Why take the risk, when there is a healthier alternative. Make a delicious coconut flour pancakes for breakfast, lunch or brunch on the weekend or even weekdays and you have yourself a healthy meal that holds fast for a good while.

If you like coconut flavour, then you are going to love this coconut flour pancakes. If you are on a Very Low Carb Keto lifestyle diet, all you need to do is use half the amount of honey that I have in this recipe or use a quarter of my suggested amount, increase the coconut oil amount and voilla, you have yourself a very low carb coconut flour pancake.

If you are a vegan, this fluffy coconut pancake recipe might be a little tricky as you will have to exclude the eggs. But eggs play a role in cakes which would be missing.

Eggs provide a structure, bind the ingredients together to give the batter some sort of stability. That would be missing without the eggs if you want to use this recipe to make vegan coconut flour pancake. I haven’t tried it without the eggs yet. You can try it and see how it unfolds (no pun intended).

So what do we need to make the coconut flour pancakes?

Milk X 150 ml (Plant-based milk like Hemp milk preferably)
Vanilla extract X 2 tbs
Baking soda X 1 tbs
Honey X 1 tbs and a half

Pinch of Salt
Cinnamon X 2 tbs (very optional)

Coconut supplies you with lots of fibre and if you have wheat allergy or gluten allergy, you will be doing yourself a good favour with this coconut flour pancakes. The coconut  will make a nice addition to your portfolio of healthy recipes.

How To Make Coconut Flour Pancakes?

My structure for making cakes and cookies has changed. I like to mix dry ingredients together in one bowl and wet ingredients in another before bringing the 2 together to make the final batter.

>> So for the dry ingredients, put the coconut flour in a mixing bowl.

>> Add the baking soda, cinnamon and a pinch of salt to the coconut flour. Mix all together.

In another bowl, get the wet ingredients together.

>> In this bowl, break the eggs in, add 2 tablespoons of coconut oil, vanilla extract, the honey and the milk. Whisk together. I prefer to use plant-based milk like Hemp milk, Coconut milk, Almond milk. If you don’t like plant-based milk, you can use a regular cow’s milk.

After whisking together thoroughly, pour the dry ingredient mixture in the 1st bowl into the 2nd bowl with the wet ingredients.

> Now mix all the ingredients together thoroughly to form a nice batter.

 

>> Place your pan on the cooker. Add a small amount of coconut oil to moisten the pan and heat up the oil.

>> Scoop in the the coconut batter in amounts that suit the size of coconut flour pancakes that you desire.

>> Flip the coconut flour pancakes when one side browns up.

That’s it. Your coconut flour pancakes are ready.

Serve with a nice cup of tea.

These pancakes are delicious as they are. Be careful what you drape the coconut flour pancakes with when you serve them. No need to make them unhealthy by draping them high fructose syrup, maple syrup or more honey. Not necessary.

Butter on top may be fine. Even better is plant-based butter, like almond butter. Low carb cheese is another option that will complement these pancakes.

I personally prefer to drape mine with low fat natural yogurt. Wierd, I know but it is healthy and it works.

My blood sugar level 1 hour after having these coconut flour pancakes was 4.7 mmol/l (84.6 mg/dl) even with a cup of tea and natural yogurt. Really Great!
